Tools of the BPM team

The BPM team specialises in biochemical analysis of muscle.

The Biochemistry and Muscle Proteins team has proteomic analysis tools (mono- and bi-dimensional electrophoresis, Western Blot; scanner and image analysis) and has access to the mass spectro­meters of the metabolism exploration platform. It has biochemical analysis tools for sugars, lipids, proteins, such as spectrophotometers, fluorometers and granulometers. For example, the team developed original methods to quantify reaction products between the lipoper­oxid­ation products by gas chromatography–mass spectrometry or the formation of free radicals by fluorescence. The team’s work during the past five years on the digestive fate of proteins and meats allowed static in vitro digestion models to be developed and the definition of conditions representing the physiology of adults and the elderly. The acquisition of a digester instrument within the unit required specific developments for the in vitro study of digestion dynamics, drawing heavily on experience acquired from our static models. Finally, a laboratory is dedicated to the preparation and design of foods (fine paste emulsion, mincing ...).
